What you will need:
- 1 spring of thyme
- 1 oz. tomato ketchup
- 6 cups of water
- 1 scotch bonnet pepper (optional)
- 1/4 pound salt fish (codfish)
- 2 lbs white rice
- 1/4 cup vegetable oil
- 1 1/2 oz. butter
- 2 onions
- 1 tomato (medium sized)
How it's done:
- You might want to soak the saltfish in water for a few hours before preparation. That way some of the saltiness will be removed.
- Boil the saltfish for around 20 minuted, or until it's cooked thoroughly.
- Shred the saltfish into small pieces.
- While that's going, saute the onions, tomato, and thyme in a skillet
- Add the saltfish to the saute, after lowering the flame and stir.
- Combine the saute, and the rice.
- Turn the fire to medium high and let the rice cook without the pot cover for 10 minutes and then add the butter to the rice.
- Wait until the water is evaporated just below the rice surface and then cover the pot and let it simmer on medium low until rice is cooked.
Note: You can substitute the saltfish with other ingredients such as shrimp, cabbage, etc. The possibilities are endless, so let your creativity shine.
