Stew Chicken







What you'll need:

  • 3 cups Jamaican chicken stock
  • 1 can creamed corn
  • 2 cups cubed chicken breast
  • 3 tbsps vegetable oil
  • 1 carrot diced
  • ½ cup diced onions
  • 1 stalk escallion diced
  • 1 egg beaten
  • ½ tsp. MSG (optional)
  • 3 tbsps. water
  • 1 tbsp flour
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp allspice
  •  3 sprigs parsley
Get to work!


1. Heat frying pan then add vegetable oil and fry cubed chicken breasts and set aside.

2. Bring chicken stock to a boil, add creamed corn, carrot, onions and escallions.

3. And return to a boil to create a stew.

4. In a small bowl, blend water and flour.

5. Slowly add flour mixture to stew, stirring constantly, until thick.

6. Add cubed chicken breasts and egg.

7. Allow to simmer for 45 minutes.

8. Remove from heat and garnish with parsley.

9. Serve with white rice.
